The ingredients are:
  • 4 cups baby spinach leaves
  • 1 cup diced cantaloupe
  • 1 cup diced avocado
  • 1/2 cup finely diced red capsicum
  • 2 tablespoons chopped mint leaves
  • DRESSING
  • 1 tablespoon mint jelly
  • 1 1/2 tablespoons white wine vinegar
  • 3 tablespoons oil (vegetable oil)
  • 1/2 teaspoon minced garlic

How to Make

  • Step 1: In a large bowl, toss spinach leaves, cantaloupe, avocado, capsicum and mint leaves.
