Ingredients

The ingredients are:
  • 1 1/2 pounds russet potatoes
  • 1 1/2 tablespoons oil (vegetable oil)
  • 1/2 teaspoon garlic salt
  • 1 teaspoon seasoning blend (Mexican seasoning)
  • 1 cup Mexican blend shredded cheese
  • 1/4 cup black beans (canned, rinsed & drained)
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green onions
  • 3 tablespoons diced green chiles (canned)
  • Salsa, Guacamole & Sour cream (optional)

How to Make

  • Step 1: Together: Prep ingredients.

  • Step 2: Adult: Preheat oven to 425F.

  • Step 3: Together: Scrub potatoes & cut into 1/2-in thick wedges.

  • Step 4: Kid: Place potatoes in a medium size bowl w/the oil, garlic salt & Mexican seasoning. Stir well to coat potatoes w/oil & seasonings.

  • Step 5: Together: Transfer to a large baking sheet & spread into a single layer. Bake for 25-30 min (stirring several times) until crisp & golden brown.

  • Step 6: Together: Top w/cheese, beans, tomatoes, olives, onions & chiles. Bake for 5 min more to melt the cheese.

  • Step 7: Together: Pick optional adds to serve from salsa, guacamole & sour cream.
