Ingredients

The ingredients are:
  • 1 1/2 tablespoons olive oil
  • 3 yellow onions (cut into halves vertically and thinly sliced)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 slices rye bread
  • 4 slices Swiss cheese (or Cheddar cheese)
  • 4 teaspoons butter

How to Make

  • Step 1: In a skillet over medium heat, heat the olive oil. Add onions, salt, nutmeg and pepper. Cook, stirring occasionally until browned and tender (20-30 minutes).

  • Step 2: Spread about 1/4 cup of the onion of each of 2 slices of bread; cover with cheese and top with remaining bread slices. Spread butter on top of bread.

  • Step 3: Heat a skillet over low heat (I would use the same skillet as I cooked the onions in) and place sandwiches, buttered side down in the skillet. Grill sandwiches for 5-10 minutes per side; cover pan during last few minutes of cooking to melt the cheese.
