  • 1/2 granulated sugar
  • 1 tablespoon corn starch
  • 1/8 teaspoon salt
  • 1 cup pineapple juice
  • 2 tablespoons fresh lemon juice
  • 3 large eggs
  • 2 tablespoons butter

How to Make

  • Step 1: Combine first 3 ingredients in a medium, heavy saucepan, stirring with a wire whisk.

  • Step 2: Stir in juices and eggs, bring to a boil over medium heat, stirring constantly with a wire whisk.

  • Step 3: Reduce heat, and simmer 1 minute or until thick, whisking constantly. Remove from heat, add butter, stirring gently until butter melts.

  • Step 4: Spoon mixture into a medium bowl, let cool. Cover and chill in refrigerator at least 6 hours or overnight (the mixture will thicken as it cools).
