Ingredients

The ingredients are:
  • 2 tablespoons mayonnaise
  • 3 tablespoons minced shallots
  • 2 tablespoons minced dill pickles
  • 1 tablespoon ketchup
  • 1/2 teaspoon pepper
  • 8 slices rye bread
  • 4 ounces cooked beef (roast beef, thinly sliced)
  • 2 ounces corned beef (thinly sliced)
  • 2 ounces shredded Swiss cheese
  • 2/3 cup kimchi (drained and thinly sliced)
  • Cooking spray

How to Make

  • Step 1: In a bowl combine first 5 ingredients (mayonnaise - pepper); stir well. Spread 1 1/2 tablespoons mayo mixture over 1 side of each of 4 bread slices. Top each with 1 ounce roast beef, 1/2 ounce corned beef and 2 tablespoons cheese. Top each sandwich with 1/2 of the kimchi and 1 bread slice. Repeat for all 4 sandwiches.

  • Step 2: Heat a skillet over medium heat.

  • Step 3: Spray both sides of the sandwich with Pam.

  • Step 4: Arrange sandwiches in pan and cook for 5-10 minutes or until lightly browned on both sides; turning once.
