Ingredients

The ingredients are:
  • 5 plum tomatoes or vine ripe tomatoes, lightly seeded and diced
  • 1-2 medium cucumbers, peeled and cut lengthwise - lightly seeded and cut in half moons
  • 1 small red onion, cut in half and thin sliced
  • Dressing:
  • 1/4 cup Greek yogurt or plain yogurt (see note below)
  • 1 clove garlic, minced
  • 1 1/2 to 2 teaspoons fresh dill, minced
  • 1/4 teaspoon sugar
  • Salt and pepper to taste

How to Make

  • Step 1: Yogurt ... If you can't find Greek yogurt, plain yogurt works fine; however, I do like strain it over night to get a rich thick yogurt consistency. Add plain yogurt to a coffee filter and place in a strainer or colander and place over a bowl. Cover and refrigerate over night. The next day you will left with a creamy thick yogurt and all the extra water will have drained out.

  • Step 2: Cucumbers ... Prepare the cucumbers and place on a couple of paper towels to absorb some of the liquid, just 5 minutes as you prepare the other vegetables.

  • Step 3: Salad ... Mix the yogurt, garlic, dill, sugar and a pinch of both salt and pepper. Add to a bowl along with the tomatoes, cucumber, onion and toss. Check for seasoning and adjust as needed. And, as I said, this isn't an exact salad, you can add more or less of any of the vegetables depending on your taste.

  • Step 4: Serve ... Refrigerate 30 minutes before serving. This is also really nice served over a bed of greens too. ENJOY!
