Step 1: Preheat oven to 350 degrees F, set oven rack to second-lowest position, then grease a 13 x 9-inch baking pan.
Step 2: In a large bowl combine flour with sugar, soda and salt, cinnamon and nutmeg.
Step 3: In a medium bowl combine whisk the eggs with melted butter, apple juice and vanilla; mix in the chopped apples and nuts.
Step 4: Using a wooden spoon mix in the apple mixture to dry ingredients just until moistened.
Step 5: Spread batter into the pan.
Step 6: Bake for about 45-50 minutes or until the cake test done.
Step 7: Cool for about 30 minutes before topping with the glaze.
Step 8: While cake is cooling prepare the caramel-cinnamon glaze; a small saucepan combine the brown sugar with butter, cinnamon and whipping cream; cook stirring constantly until bubbly and all of the sugar is dissolved, then drizzle slightly warm glaze over cooled cake.
