Ingredients

The ingredients are:
  • 3 cups all-purpose flour
  • 1 1/2 to 2 cups granulated sugar (can use white and brown sugar)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (can increase amount)
  • 1/2 teaspoon ground nutmeg (optional)
  • 3 large eggs (lightly beaten)
  • 1 cup melted butter (can use 1/2 cup each oil and melted butter)
  • 2 teaspoons vanilla extract
  • 3 medium (1 pound) apples (peeled and chopped)
  • 1/2 cup apple juice
  • 1 cup chopped walnuts
  • CINNAMON CARAMEL GLAZE
  • 1 cup brown sugar
  • 1/4 cup butter
  • 1/2 to 1 teaspoon ground cinnamon
  • 1/3 cup heavy whipping cream (33-35%)

How to Make

  • Step 1: Preheat oven to 350 degrees F, set oven rack to second-lowest position, then grease a 13 x 9-inch baking pan.

  • Step 2: In a large bowl combine flour with sugar, soda and salt, cinnamon and nutmeg.

  • Step 3: In a medium bowl combine whisk the eggs with melted butter, apple juice and vanilla; mix in the chopped apples and nuts.

  • Step 4: Using a wooden spoon mix in the apple mixture to dry ingredients just until moistened.

  • Step 5: Spread batter into the pan.

  • Step 6: Bake for about 45-50 minutes or until the cake test done.

  • Step 7: Cool for about 30 minutes before topping with the glaze.

  • Step 8: While cake is cooling prepare the caramel-cinnamon glaze; a small saucepan combine the brown sugar with butter, cinnamon and whipping cream; cook stirring constantly until bubbly and all of the sugar is dissolved, then drizzle slightly warm glaze over cooled cake.
