Ingredients

The ingredients are:
  • 3 large eggs
  • 2 cups granulated sugar (can use half white sugar and brown sugar)
  • 1 cup oil (vegetable oil, can use canola oil)
  • 1 tablespoon vanilla extract (or 2 teaspoons maple extract)
  • 2 cups applesauce (sweetened or unsweetened)
  • 1/2 cup sour cream
  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg (can use more)
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 2 apples (large apples or 3 small, peeled cored and chopped)
  • 3/4 cup chopped walnuts (optional, or can use raisins)

How to Make

  • Step 1: Preheat oven to 350 degrees F, then grease and flour two 9 x 5-inch loaf pans.

  • Step 2: In a large bowl beat eggs with sugar, oil and vanilla or maple extract for about 3 minutes.

  • Step 3: Beat in applesauce and sour cream until blended and combined..

  • Step 4: In another bowl combine flour with cinnamon, nutmeg, baking powder and baking soda (if you are grated the apples then add them into the flour mixture).

  • Step 5: Add the flour mixture to the wet mixture beating on low speed until just blended.

  • Step 6: Mix in apples and nuts.

  • Step 7: Divide the batter between the two loaf pans.

  • Step 8: Bake for about 75 minutes or until loaves test done.
