Step 1: Preheat oven to 350 degrees F, then grease and flour two 9 x 5-inch loaf pans.
Step 2: In a large bowl beat eggs with sugar, oil and vanilla or maple extract for about 3 minutes.
Step 3: Beat in applesauce and sour cream until blended and combined..
Step 4: In another bowl combine flour with cinnamon, nutmeg, baking powder and baking soda (if you are grated the apples then add them into the flour mixture).
Step 5: Add the flour mixture to the wet mixture beating on low speed until just blended.
Step 6: Mix in apples and nuts.
Step 7: Divide the batter between the two loaf pans.
Step 8: Bake for about 75 minutes or until loaves test done.
