Ingredients

The ingredients are:
  • 3 eggs (lightly beaten)
  • 2 cups cream-style cottage cheese
  • 1 package (10 ounce) frozen chopped spinach (thawed and VERY well drained)
  • 1/3 cup crumbled feta cheese (I add a little more)
  • 1/4 cup melted butter
  • 3 tablespoons all-purpose flour
  • 3 tablespoon minced yellow onion
  • 2 garlic clove, minced
  • 1/2 teaspoon salt (or more to you taste)
  • Ground nutmeg (1 dash)
  • Pepper
  • 1/3 cup grated Parmesan cheese

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Grease a 1-1/2-quart casserole; set aside.

  • Step 3: In a large bowl, combine eggs, cottage cheese, spinach, feta cheese, melted butter, flour, onions, garlic, salt and nutmeg. Add pepper. Sprinkle top with Parmesan cheese. Transfer mixture to the prepared casserole.

  • Step 4: Bake, uncovered, about 45 minutes or until center is nearly set.
