Step 1: Blend everything except chicken and chilli.
Step 2: Pour liquid into a bowl and marinate the chicken in the fridge overnight, or a minimum of 4 hours.
Step 3: When ready to cook the chicken, place it on a flat tray skin side up, and bake in a pre-heated oven at 180C for 15 minutes.
Step 4: Now turn chicken over and cook for another 10 minutes.
Step 5: Turn over again to skin side up and cook for a further 5 minutes or until juices are no longer pink when pricked with a skewer.
Step 6: Serve chicken hot with as much sauce as you can save from the roasting pan.
Step 7: Serve with salad on a hot day or mash on cool days and garnish chicken with chilli if desired.
