Step 1: Blender ... Add every thing to the blender or food processor except the olive oil and pulse until everything is well mixed. Slowly add in the olive oil in a slow stream on a constant low speed and mix until combined and thick and creamy. Season for salt and pepper and adjust accordingly.
Step 2: Serve ... Chill at least 15-30 minutes before serving. Store in a tupperware container with a good sealed lid. It will keep for 1 week in the refrigerator. Great over all greens, even over grilled vegetables and meats. ENJOY!
