Ingredients

The ingredients are:
  • 1 cup rice flour (white)
  • 1/2 cup ground flaxseed (fresh ground)
  • 1/2 cup tapioca starch
  • 1/2 cup brown sugar
  • 1 cup walnuts (chopped)
  • 1/4 cup oat flour
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/2 cup melted butter
  • 4 bananas (frozen that have been thawed)

How to Make

  • Step 1: Peel the thawed bananas and mash; set aside.

  • Step 2: Whisk the dry ingredients from the rice flour through to the salt together in a large bowl.

  • Step 3: In a smaller bowl, whisk together the eggs, maple syrup and melted butter.

  • Step 4: Pour into the dry mixture along with the mashed bananas and mix well.

  • Step 5: Coat 15 silicone muffin cups with non-stick spray and fill 2/3 of the way with the cupcake batter.

  • Step 6: Place the filled silicone muffin cups on a rimmed baking sheet and place in a preheated 350 degree Fahrenheit oven and bake for 35 to 40 minutes or until cooked through. (Insert toothpick in center of cupcake and it should come out clean.)

  • Step 7: Remove from oven and place on a baking rack to cool.
