Ingredients

The ingredients are:
  • 1 pound cooked soba noodles (chilled)
  • 1 1/2 tablespoons dried wasabi powder
  • 4 teaspoons cold water
  • 1 1/2 tablespoons miso (dark miso or white miso)
  • 1/3 cup sake
  • 3/4 teaspoon brown sugar
  • 1 1/2 tablespoons rice vinegar
  • 1 1/2 tablespoons mustard (any type)
  • 1/2 cup chopped scallions
  • 2 teaspoons white sesame seeds

How to Make

  • Step 1: If the noodles have stuck together, loosen them by placing them in a colander and running cool water over them.

  • Step 2: While they drain, prepare the sauce: In a large bowl, mix together the wasabi and water to form a paste. Mix in the miso and sake. Then add the sugar, vinegar, and mustard.

  • Step 3: Remove a scant 1/2 cup of the sauce and set aside.

  • Step 4: Mix the noodles in the bowl with the remaining sauce.

  • Step 5: Set aside for 10 to 15 minutes for the flavors to develop. (For a very mellow flavor, allow to sit, covered, for up to 1 day in the refrigerator.)

  • Step 6: Transfer to individual bowls and top with the scallions and the sesame seeds.

  • Step 7: Serve the rest of the sauce on the side.
