  • 5 zucchini (cubed)
  • 4 large eggs (beaten)
  • 1 teaspoon salt
  • 1/2 cup milk
  • 2 teaspoons pepper
  • 1 pound Monterey Jack cheese (cubed)
  • 3 tablespoons all-purpose flour
  • 1/4 cup fresh chopped parsley
  • 1/4 teaspoon onion flakes
  • 1/2 cup green bell pepper (chopped)
  • 1/4 cup melted butter (1/4 stick)
  • Corn flake crumbs

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Cook zucchini for 4 minutes in boiling water. Drain; cool.

  • Step 3: Mix all ingredients except butter and corn flake crumbs.

  • Step 4: Grease casserole dish.

  • Step 5: Add zucchini mixture to casserole dish. Sprinkle crumbs on top. Drizzle with butter.

  • Step 6: Bake for 20 to 30 minutes until the casserole is hot and bubbly.

  • Step 7: Take out of oven and let stand 5 to 10 minutes.
