Step 1: Rub the chicken with mandy spice salt and pepper, then put in frig for at least 3 hours.
Step 2: Bake in oven 375 degrees turning 1/2 way through about 45 minutes or until golden brown (they had saute in nonstick pan, this is just easier this way for me)
Step 3: In 4 quart sauce pan, melt butter then add spices and rice, brown a minute. Add water which you have added liquid smoke, tomatoes and onion; bring to a boil. Cover and cook 15 minutes on low. Then let set covered until chicken is done.
Step 4: Add chicken to top of rice with the chicken oil with spices, add more water here if needed. Cover again and cook 15 more minutes more on simmer.
Step 5: Can have fried onions for top if you wish.
