Ingredients

The ingredients are:
  • 1 (4 pound) whole chicken (cut up)
  • 4 teaspoon mandy spice
  • 1 teaspoon salt
  • RICE
  • 1 1/2 cups rice
  • 1 tomato (diced)
  • 1 small yellow onion (left whole)
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric
  • 1 teaspoon pepper (less if you like)
  • 1 tablespoon butter
  • 1 teaspoon olive oil
  • 2 1/2 c water (they had 3 cups)
  • 1/16 teaspoon liquid smoke (just a couple drops)
  • 2 cardamom pods
  • 1 chicken bouillon cube
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Rub the chicken with mandy spice salt and pepper, then put in frig for at least 3 hours.

  • Step 2: Bake in oven 375 degrees turning 1/2 way through about 45 minutes or until golden brown (they had saute in nonstick pan, this is just easier this way for me)

  • FOR THE RICE

  • Step 3: In 4 quart sauce pan, melt butter then add spices and rice, brown a minute. Add water which you have added liquid smoke, tomatoes and onion; bring to a boil. Cover and cook 15 minutes on low. Then let set covered until chicken is done.

  • Step 4: Add chicken to top of rice with the chicken oil with spices, add more water here if needed. Cover again and cook 15 more minutes more on simmer.

  • Step 5: Can have fried onions for top if you wish.
