Ingredients

The ingredients are:
  • 1 pound whole wheat pasta (multi grain or a light blend is good; i used spaghetti; but penne or other pasta of your choice is fine)
  • 7 ounces baby spinach, rough chopped (1 bag)
  • 1 onion (medium, fine diced)
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • 1/2 lemon zested
  • 1 ounce cream cheese
  • 3 to 4 ounces goat cheese (diced, i used 4 ounces)
  • 3 tablespoons parmesan cheese (grated)
  • 1/2 to 1 cup vegetable broth (warm, you can substitute chicken broth)
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Sauce ... As the pasta cooks, get everything ready, because this is a very quick cooking dish. In a large saute pan (you will be adding the pasta to this), add the olive oil, red pepper flakes, onion, and garlic. Bring to medium heat and cook the onion and garlic until tender, about 3-5 minutes. Have the cheese, broth and spinach ready to go too.

  • Step 2: Pasta ... Cook according to package directions. When the pasta is done (al dente), add the spinach, stir and remove immediately from the heat and drain. Set to the side. The heat from the pasta will cook the spinach.

  • Step 3: Finish ... Add the spinach and pasta to the pan with the olive oil, onion and garlic and toss. Add in the goat cheese, cream cheese, 1/2 of the warm broth (15 seconds in the microwave), lemon zest and juice and mix well. If you want it a bit creamier, add the remaining broth. Season well with salt and pepper.

  • Step 4: Serve ... Family style, garnish with extra parmesan and ENJOY! A very nice side dish or main dish.
