Ingredients

The ingredients are:
  • 1 pound ground turkey (you can also use chicken)
  • 1 large onion, diced
  • 2 celery ribs, diced
  • 1 yellow pepper, diced
  • 1 red pepper, diced
  • 2 tablespoons garlic, minced (more or less depending of your taste)
  • 1 can (15 ounce) diced tomatoes (or petite)
  • 1 can (15 ounce) corn kernels (shoepeg corn you can also use white corn if you can't find shoepeg)
  • 1 can (4 ounce) green chilies
  • 4 cans (15 ounces each) cannellini beans (2 drained and rinsed; 2 not)
  • 1 container (1 quart) chicken broth, (I use low salt)
  • 1 cup apple cider
  • 3 tablespoons chili powder (according to taste)
  • 3 teaspoons cumin (I use 5, but I love the taste)
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons allspice
  • 1/2 teaspoon nutmeg
  • 1 teaspoon red pepper flakes (to taste, more or less)
  • 2 bay leaves
  • 2 tablespoons fresh cilantro, fine chopped
  • 1/2 lime, juiced
  • 2 teaspoons hot sauce (such as crystal, franks, or tabasco)
  • 2 tablespoons oil (olive oil, to saute the vegetables and turkey)
  • Salt and pepper to taste
  • Garnish (use any that you like)
  • Sour cream
  • Monterey jack or pepper jack cheese
  • Diced tomato
  • Avocado, cut in slices or diced
  • Fresh lime wedges
  • Black olives
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Base ... In a large pot, add 1/2 of the olive oil and all the vegetables (onion, celery, peppers, and garlic) along with the red pepper flakes; cook on medium high heat for 2-3 minutes. Then add in the rest of the oil and turkey; breaking up the turkey as it cooks. Cook on medium heat until the vegetables are tender and the turkey is no longer pink.

  • Step 2: Chili ... Add in the tomatoes, broth, apple cider, beans, green chilies, corn, bay leaves, and seasoning (except the fresh cilantro, lime, and hot sauce); bring to a boil, and check for seasoning. You should really simmer a bit before adding any additional seasoning - as it simmers the flavors intensify and change. After a hour, check again for seasoning. You can add more cumin, cinnamon, salt or pepper; depending on the flavor you like. After another hour, check again for seasoning. Simmer anywhere from 1-3 hours. The more it simmers and rests, the better the flavor.

  • Step 3: Finish ... Right before serving, add in the lime juice and cilantro and prepare any garnishes you like.

  • Step 4: Serve ... I like sour cream, avocado, cheese and lime wedges. But olives are also really good. Corn or tortilla chips are also fun if you don't like corn bread - or try Sarasota's Sweet Cornbread with my Jalapeno Lime Butter (both posted on Zazz), that is my favorite. Just ladle in a big bowl, top and ENJOY!
