  • 3 tablespoons butter (or margarine)
  • 3/4 cup chopped sweet onion
  • 2 cups frozen hash browns (cubed, thawed)
  • 1 can (12 ounce) Spam (diced into small cubes)
  • 1 1/2 cups frozen peas & carrots (leftovers of the same works too)
  • 1/2 teaspoon ground black pepper,or to taste
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon garlic powder, to taste
  • 1 cup shredded sharp cheddar cheese (optional)

How to Make

  • Step 1: In a large non stick skillet over medium heat, melt margarine and cook onion until softened.

  • Step 2: Add potatoes and spam then cook until lightly browned.

  • Step 3: Then add veggies, sprinkle with garlic powder, salt and pepper.

  • Step 4: Stir occasionally until mixture is heated through.

  • Step 5: Top with cheese if desired, and let set for 5 minutes.
