Ingredients

The ingredients are:
  • CAKE
  • 1 1/2 cups unsalted butter (softened, 3 sticks)
  • 3 cups granulated sugar
  • 5 large eggs
  • 2 cups all-purpose flour
  • 1 1/3 cups unsweetened cocoa powder (Dutch processed cocoa)
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1/2 cup brewed coffee (or water)
  • 2 teaspoons vanilla extract
  • COCOA SPICE TOPPING
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon unsweetened cocoa powder (Dutch processed cocoa)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cloves
  • 1/2 cup sparkle sugar (for decorating)

How to Make

  • FOR THE CAKE

  • Step 1: Preheat oven to 350 F. Line two 9 x 5 x 3 loaf pans with parchment paper.

  • Step 2: Mix butter and sugar with electric mixer until light and creamy (approx. 5 minutes.) Mix in the eggs.

  • Step 3: In a separate bowl, sift together flour, cocoa, cinnamon, salt, baking powder and baking soda.

  • Step 4: In another bowl, whisk together the buttermilk, coffee or water and vanilla. With your mixer on a low speed, begin adding the contents of each bowl to the butter mixture, alternating between the two until your mixture is fully blended.

  • Step 5: Divide the batter between the two pans.

  • FOR COCOA SPICE TOPPING

  • Step 6: Combine the sugar, cinnamon, cocoa, ginger and cloves. Divide mixture in half, then evenly layer each half of mix on top of the batter in the two pans. Then sprinkle with the sparkle sugar.

  • Step 7: Bake for 45-50 minutes.
