Ingredients

The ingredients are:
  • 2 1/4 cups self-rising cornmeal
  • 1/2 cup milk
  • 3/4 cup buttermilk
  • 2 large eggs (separatley beaten)
  • 1 tablespoon mayonnaise
  • 2 to 3 slices bread (semi-stale Italian or French bread 1-2 days old)
  • 1/2 yellow onion (chopped)
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 to 3 teaspoons sage (rubbed)
  • 1/2 cup butter (melted)
  • 1/2 cup half and half
  • 1 cup chicken broth
  • 1 can (10 3/4 ounce) condensed cream of chicken soup (undiluted, divided in half)

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Mix together cornmeal, milk, buttermilk, only 1 egg and mayonnaise. Pour the mixture into a well-greased or buttered 8-inch baking pan. Bake for 30 minutes until brown. Once it is finished baking, remove it from the oven and let it cool.

  • Step 3: After the cornmeal mixture has cooled, in a bowl, crumble with your fingers along with 2-3 slices of stale white bread. Next, add the onion, poultry seasoning, salt, pepper and sage. Mix well. Then mix in melted butter, the other remaining egg, half and half, chicken broth and ONLY HALF OF A CAN of the cream of chicken soup. Mix well.

  • Step 4: Pour into a greased 10 1/2-inch square cast iron skillet. Spread the rest of the can of soup on top of the dressing ingredients mixture.

  • Step 5: Bake for 45 minutes in a 350-degree preheated oven until lightly browned.
