Step 1: Roughly chop the pre-cooked eggs in a mixing bowl (just to make things easier). Add the vinegar, cheese & sour cream.
Step 2: Using an immersion blender, puree the mixture to a smooth dipping consistency (adding more sour cream as desired).
Step 3: Fold in the crumbled bacon & snipped chives. Add salt &/or pepper to taste & stir well. Transfer the mixture to a serving bowl, sprinkle w/paprika (if using) & refrigerate until ready to use. Serve w/dippers of your choice.
