Ingredients

The ingredients are:
  • 3 tablespoons butter (or more as you like)
  • 2 garlic cloves, minced (optional)
  • 1 medium sweet onion (chopped)
  • 2 cups chopped zucchini (about half a medium zucchini)
  • 3 cups corn kernels (fresh, scraped off of corn ears)
  • 1 cup green string beans (fresh beans, blanched and cut in half-inch pieces)
  • 1 to 2 Roma tomato (coarsely chopped)
  • 3 tablespoons fresh chopped basil (coarsely chopped)
  • 3 tablespoons fresh chopped cilantro (coarsely chopped)
  • Kosher salt and ground black pepper

How to Make

  • Step 1: In a large skillet over medium-high heat, saute onion and garlic in butter until soft, about 2 minutes.

  • Step 2: Add chopped zucchini, and saute 3 minutes.

  • Step 3: Stir in corn, green beans and tomatoes. Add salt, pepper, basil and cilantro. Heat until mixture is hot.

  • Step 4: Add salt and pepper.
