  • 1/3 cup butter
  • 1 cup brown sugar, well packed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 cup hot water
  • 2 cups all purpose flour
  • 1/8 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup orange juice
  • 1 teaspoon vanilla

How to Make

  • Step 1: Mix raisins, butter, brown sugar, spices, and water in heavy saucepan.

  • Step 2: Place on high heat and bring to a boil.

  • Step 3: Lower heat and simmer for 6 minutes.

  • Step 4: Remove from heat and turn raisin mixture into a large bowl.

  • Step 5: Let stand at room temperature for 30 minutes.

  • Step 6: Meanwhile, combine flour, salt, and baking soda and mix gently.

  • Step 7: Add orange juice, vanilla and dry ingredients to cooled raisin mixture and beat well.

  • Step 8: Turn batter into a well greased 10“ x 4” x 3” loaf pan.

  • Step 9: Bake at 350 degrees Fahrenheit for 1 hour.

  • Step 10: Allow cake to cool in pan for 10 minutes.

  • Step 11: Remove from loaf pan and allow to cool completely on wire rack.

  • Step 12: Let cake ripen for at least one day before slicing.
