Step 1: Combine mayo, lemon juice & fresh dill. Set aside.
Step 2: Place shrimp & Brie cheese in a non-stick sauté pan. Cook over medium heat until shrimp are warmed & the Brie begins to melt.
Step 3: Lay out 4 warmed tortillas. Top each with 1/4 of the shrimp & Brie mixture, 2/3 cup mixed greens, 1/4 of the diced tomato & 1 slice of bacon (crumbled).
Step 4: Roll up & cut in half on the bias. Plate 1/2 tortilla for each person, garnish w/crisp cucumber slices + a lemon wedge & serve immediately w/the mayo sauce optional.
