Step 1: Heat olive oil in heavy medium skillet over medium-low heat.
Step 2: Add zucchini, garlic and oregano and saute until garlic is just golden, about 2 minutes.
Step 3: Add salsa and simmer until zucchini is just tender, about 6 minutes.
Step 4: Reduce heat to low.
Step 5: Sprinkle Jack cheese over zucchini.
Step 6: Cover and cook until cheese melts, about 2 minutes.
