Step 1: Before starting to make the brittle, generously brush a non-stick cooking/baking sheet with melted butter or margarine.
Step 2: In a plastic microwave-safe 2 litre bowl mix the white sugar, corn syrup and salt together; microwave on HIGH for 3 minutes (removing to stir halfway through). Remove add in peanuts and stir well; return to microwave for 4 minutes.
Step 3: Remove and stir in butter and vanilla until combined; place back in microwave for 1 minute; quickly stir in baking soda until thoroughly combined.
Step 4: Quickly pour onto buttered baking sheet - DO not stir this will cause bubbles, instead move the pan to level the brittle to a semi-thin layer.
Step 5: When cool, break into pieces.
Step 6: TIP: Soak the bowl and spoon in very hot water to clean
