Step 1: Mix all ingredients (except cinnamon and gelatin and 2 T water ,see later) in a sauce pan and cook over medium heat for 7-8 minutes until it's hot.
Step 2: While the mixture is heating up, in a separate bowl mix the gelatin with 2 tbsp water and let it rest.
Step 3: When the mix is hot, remove from heat and let it rest for 2-3 minutes. Then add the gelatin-water mix and stir very well.
Step 4: Make sure the gelatin is completely incorporated and no lumps are present.
Step 5: Pour it into the a serving bowl and refrigerate immediately. It should take about 5 hours for the Tembleque to set.
Step 6: Once set, sprinkle some Cinnamon on top.
