Ingredients

  • 1 (16 ounce) can refried beans (fat free spicy refried beans, I've used the green chile lime ones too)
  • 1 can (15 ounce) corn niblets (Mexican-style corn, regular is fine)
  • 1 can (15 ounce) black beans (rinsed and drained)
  • 1 can (14 1/2 ounce) chicken broth
  • 1 can (14 1/2 ounce) diced tomatoes (with green chilies and spices, regular or stewed tomatoes works too)
  • 1 can (4 ounce) diced green chilies (or one 4 ounce can diced jalapenos)
  • 1/2 cup salsa
  • 1 to 2 teaspoons ground cumin
  • Garlic salt, to taste (optional)
  • Hot sauce, to taste (optional)
  • Options to serve with
  • Shredded monterey jack cheese
  • Sour cream
  • Chopped cilantro
  • Chopped green onions
  • Diced fresh tomatoes
  • Chopped cooked chicken breast
  • Tortilla chips

How to Make
