Step 1: Cut off one end of the spaghetti squash, then poke holes in it with a fork (as if you were baking a potato). Cook in the microwave on high for 10 - 20 minutes, depending on the size of the squash (note, you may bake it in the oven for 40 - 60 minutes).
Step 2: Cut the cooked squash in half lengthwise and let cool.
Step 3: When cool, scoop out all the seeds and excess “gushy bit”. Rake with a fork to remove the squash.
Step 4: Press dry using dish towel or paper towel to remove as much liquid as possible.

Step 7: Combine squash and onion in a bowl. Add salt and pepper to taste.
Step 8: Put frying pan on medium low heat and spray with PAM olive oil; do not begin cooking until pan is hot.
Step 9: Using your hands, make silver-dollar pancake sized pancakes with the mixture.
Step 10: Lightly spray both sides of the pancakes with PAM butter.
Step 11: Place in pan and cook both sides until lightly brown.
Step 12: Peel and core the apples.
Step 13: Boil apples in a little water (do not cover) cook until tender.
Step 14: Whisk together, add sweetener, to taste.
