Ingredients

The ingredients are:
  • 1 cup pineapple juice
  • 1 cup soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (OPTIONAL)
  • 3 pounds chicken wings (drummettes, or thighs)
  • 0.6 ounces orange flavored gelatin (DIVIDED ~ I used sugar free. Original recipe called for 1.5 ounces lemon gelatin, but didn't specify if with sugar.)
  • 2 tablespoons poppy seeds (DIVIDED; or substitute TOASTED sesame seeds)

How to Make

  • Step 1: In a large bowl, combine the juice, soy sauce, garlic, coriander, and optional cayenne pepper.

  • Step 2: Add the wings and let marinate for 15-30 minutes.

  • Step 3: Preheat oven to 350F.

  • Step 4: On a foil-lined rimmed baking sheet sprayed with cooking spray, arrange the chicken in a single layer.

  • Step 5: Pour 1 cup of the marinade over the chicken, then sprinkle over half the gelatin and half the seeds; bake for 25 minutes.

  • Step 6: Turn the chicken over and sprinkle with remaining gelatin and the seeds of your choice, then bake until browned, about 20 minutes.

  • Step 7: Note: Chicken thighs may require an additional 10 minutes roasting time.

  • Step 8: Discard any remaining marinade!
