Ingredients

The ingredients are:
  • 1 pound raw shrimp (medium size)
  • 1 package (7 ounce) flaked coconut
  • 2 large eggs
  • 1 tablespoon granulated sugar
  • 1/4 cups water
  • 1 teaspoon salt
  • 2/3 cups cornstarch
  • 1/2 cups all-purpose flour
  • Oil (to fry battered shrimp)
  • PINEAPPLE DIPPING SAUCE
  • 1 can (8 ounce) crushed pineapple
  • 1/2 cup sweet & sour sauce (Chinese)
  • 1/2 cup granulated sugar
  • 1/4 cup plum preserves (red plum)

How to Make

  • FOR THE SAUCE

  • Step 1: Place all sauce ingredients in a small saucepan. Simmer over medium-low heat for 20-25 minutes, stirring frequently until the mixture thickens slightly.

  • FOR THE SHRIMP

  • Step 2: Butterfly all the fresh shrimp.

  • Step 3: Mix eggs and water. Set aside.

  • Step 4: Place 1/3 cup of corn starch in a bowl for dusting shrimp.

  • Step 5: In a separate bowl, combine remaining 1/3 cup cornstarch, coconut, sugar, salt and flour. Blend well.

  • Step 6: Heat oil for deep frying.

  • Step 7: Roll shrimp in cornstarch, dip in egg wash, then roll in coconut mixture.

  • Step 8: Place shrimp in hot oil and deep fry until done (shrimp will float to the top when cooked).
