Ingredients

The ingredients are:
  • 2 bacon strips (chopped, a small amount of cooked ham could be substituted )
  • 2 tablespoons chopped yellow onion
  • 1/3 cup cooked cubed potatoes (1/2 cup)
  • 1 tablespoon margarine (butter)
  • 2 large eggs (3 eggs)
  • 2 tablespoons milk (3 Tablespoons water)
  • 1/4 teaspoon salt, or to taste (1/8 teaspoon)
  • 1/4 teaspoon ground black pepper, or to taste (1/8 teaspoon)
  • 1/4 cup shredded sharp cheddar cheese

How to Make

  • Step 1: In a small non stick skillet over medium heat,cook bacon and onion until bacon is crisp and onion is soft.

  • Step 2: Add the cubed potato and heat through then drain on paper towels and set aside.

  • Step 3: In the same skillet melt margarine over medium-high heat.

  • Step 4: Whisk the eggs,milk,salt,and pepper.

  • Step 5: Then add egg mixture to skillet(eggs should start setting right away).

  • Step 6: As the eggs start setting,push cooked eggs to center and let uncooked portion flow underneath.

  • Step 7: When eggs are set,sprinkle cheese on one side and top with potato/bacon mixture.

  • Step 8: Then cover potato mixture with other side of omelet,and slide onto plate.
