Ingredients

The ingredients are:
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons unsweetened cocoa
  • 1/4 teaspoon kosher salt
  • 4 egg yolks
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 vanilla bean (split lengthwise)
  • 6 ounces bittersweet chocolate (melted and cooled)
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • Whipped cream and chopped pretzels, garnish to serve

How to Make

  • Step 1: In a saucepan whisk together the first 4 ingredients (sugar - salt).

  • Step 2: In a large bowl whisk together the next 3 ingredients (egg yolks - cream); scrape vanilla seeds from pod and add to bowl. Whisk liquid ingredients into dry ingredients.

  • Step 3: Bring mixture to a boil over medium-high heat; whisking constantly. Reduce heat to medium and continue cooking, whisking until mixture is thick enough to coat a spoon (3-5 minutes). Remove from heat and whisk in chocolate, butter and vanilla extra (the mixture will thicken). Strain mixture through a fine sieve into a clean bowl.

  • Step 4: Divide pudding among small bowls and cover with plastic wrap (the plastic wrap should be directly on the surface of the pudding). Chill for 4 hours or up to 3 days.

  • Step 5: To serve: top pudding with whipped cream and chopped pretzels.
