Ingredients

The ingredients are:
  • 2 large tomatoes (ripe beefsteak tomatoes are recommended)
  • 2 large lettuce leaves
  • 1 cup sour cream (do not use low-fat non-fat)
  • 3 tablespoons buttermilk
  • 1 tablespoon white wine vinegar
  • 3/4 cup crumbled blue cheese
  • Salt and pepper to taste
  • Red onions, chopped (use as much as you want)

How to Make

  • Step 1: Cut each tomato into 4 (3/8 x 1/2 inch thick) slices.

  • Step 2: Arrange 4 tomato slices overlapping on a lettuce leaf on each of 2 serving plates.

  • Step 3: Mix sour cream with buttermilk and vinegar until smooth. Stir in 1/2 cup crumbled cheese and salt and pepper to taste. Drizzle blue cheese dressing down center of tomatoes, using amount desired. Sprinkle with remaining blue cheese, using 2 tablespoons for each plate. Then top with a sprinkling of red onions, if desired. Serve immediately.
