  • 2 cups cooked diced chicken
  • 2 bananas (firm, cut into 1/2 inch thick slices)
  • 3 celery stalks, chopped
  • 1 can (20 ounce) pineapple chunks (drained)
  • 1 can (11 ounce) mandarin oranges (drained)
  • 1/2 cup flaked coconut
  • 1/2 cup chopped salted cashew nuts (more to top the salad on the plate)
  • 1/8 teaspoon black pepper
  • 1 head iceberg lettuce, shredded

How to Make
