Ingredients

The ingredients are:
  • 4 summer squash, zucchini or yellow sliced 1/4-1/2 inch lengths
  • 2 tablespoons lemon juice
  • 2 tablespoons white vinegar
  • 2 cloves garlic, diced
  • 1/2 teaspoon thyme, recipe says fresh but I used dried
  • 1/3 cup oil
  • Salt, to taste pepper, to taste

How to Make

  • Step 1: Place squash in bowl and set aside.

  • Step 2: Mix all ingredients together, except oil.

  • Step 3: Drizzle oil in slowing whipping to emulsify.

  • Step 4: Pour marinade over squash, reserve some to pour over after grilling. Marinade for 2 hours or more.

  • Step 5: Grill on hot gril, turning when cooked on one side. This will not take long as squash will cook quickly if grill is hot.

  • Step 6: Place hot cooked squash in bowl and pour reserve marinade over the top, serve immediately.
