Step 1: Season the roast generously with salt and pepper; set aside.
Step 2: Melt the bacon dripping over medium-high heat in a Dutch oven and brown the venison roast on all sides.
Step 3: Remove the roast and set aside.
Step 4: Place the onions and garlic in the Dutch oven and cook until the onions just start to soften, about 5 minutes.
Step 5: Stir in the wine and cook for another 5 minutes.
Step 6: Return the roast to the pot and add the remaining ingredients; cover and place in a pre-heated 350 degree Fahrenheit oven and cook for 2 1/2 to 3 hours.
Step 7: If making a gravy with the drippings I have added my favourite method in the recipe intro.
Step 8: Enjoy!
