Ingredients

The ingredients are:
  • 2 pounds boneless skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 3/4 ounces turkey pepperoni (about 40 slices, sliced in half)
  • 1/4 cup sliced black olives
  • 1/2 cup sliced mushrooms
  • 3/4 cup low-sodium chicken broth
  • 1 tablespoon ketchup
  • 1 teaspoon dried Italian seasoning
  • 3/4 cup shredded low-fat mozzarella cheese (low moisture)

How to Make

  • Step 1: Place chicken in a slow cooker. Sprinkle with salt and pepper.

  • Step 2: Cut pepperoni slices in half. Add pepperoni, mushroom and olives to cooker.

  • Step 3: In a small bowl, whisk together chicken broth, tomato katsup and Italian seasoning. Pour mixture in cooker.

  • Step 4: Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours.

  • Step 5: Five minutes before you serve, sprinkle cheese on top of chicken. Cover with lid and allow cheese to melt.

  • Step 6: Using a slotted spoon, transfer chicken, pepperoni, mushroom and olives to plates. Discard cooking liquid.
