Step 1: Mix first 8 ingredients in a bowl with a wire whisk.
Step 2: Pound out chicken breasts in a zip lock bag to make the thickness even throughout.
Step 3: Season with salt and pepper on both sides.
Step 4: Heat olive oil in a skillet over medium heat.
Step 5: Brown chicken breasts on each side. Pour off excess oil. Pour sauce over chicken and cover. Cook on medium-low covered for 30 minutes. Remove lid and cook an additional 30 minutes, turning chicken 2 or 3 times. Watch so it doesn't reduce down too much too fast. Let it reduce down to a thick sauce. Serve and spoon sauce over it.
