  • 1 pound ground beef (or ground turkey)
  • 1 large yellow onion, chopped
  • 2 teaspoons garlic powder
  • 2 1/2 cups water
  • 1 cup dry rice
  • 1 tablespoon crushed beef bouillon cubes
  • 2 teaspoons dry mustard
  • 1 medium green bell pepper, chopped
  • 1 medium tomato, chopped
  • 1 cup shredded Monterey jack cheese
  • Salt & pepper

How to Make

  • Step 1: Brown beef with onion in a large skillet; drain off fat. Stir in rice, water, bouillon, and dry mustard. Bring to a boil, reduce heat and simmer until liquid is absorbed, about 25 minutes.

  • Step 2: Stir in green pepper and tomato; cook just until heated through. Season with some salt and pepper.

  • Step 3: Sprinkle cheese over top.

  • Step 4: Cover and remove from heat. Let stand 2 to 3 minutes to let the cheese melt.
