  • 4 large sweet potatoes (cooked and mashed)
  • 2 to 3 teaspoons butter (very softened)
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 to 3 tablespoons brown sugar
  • 1 1/2 cups corn flakes (crushed)
  • 8 pineapple rings
  • 8 maraschino cherries

How to Make

  • Step 1: Preheat oven to 350° F.

  • Step 2: Mix sweet potatoes, butter, salt, pepper, cinnamon, nutmeg and brown sugar well. Spray hands with non-stick cooking spray for easy handling of mixture. Make into 8 balls. Roll balls in crushed corn flakes. Spray cookie sheet with non-stick cooking spray or line with parchment paper. Place pineapple rings on it.Place sweet potato balls on top of pineapple slice and top with cherries. Bake at 350 degrees for 30 minutes.
