Ingredients

The ingredients are:
  • COOKIES
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 12 tablespoons unsalted butter (room temperature, 6 oz)
  • 1 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon rum extract
  • 1 tablespoon grated lime zest
  • 2 large eggs
  • GLAZE
  • 1 tablespoon unsalted butter (melted)
  • 1 1/2 teaspoon confectioners' sugar
  • 1 1/2 tablespoon light rum
  • 1 1/2 tablespoon lime juice

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Mix flour, baking powder and salt together in a bowl and set aside.

  • Step 3: In a large mixing bowl with an electric mixer on medium speed, cream the butter and sugar until light and smooth. Beat in vanilla, rum extract and lime zest, scraping down sides of bowl. Reduce speed to low and add eggs, one at a time until just blended.

  • Step 4: By hand, add flour mixture and stir until blended. Dough will be soft.

  • Step 5: Scoop dough by level tablespoonfuls and roll into balls. Place on two ungreased baking sheets 2 inches apart. Press down slightly.

  • Step 6: Bake one sheet at a time for about 10 minutes, or until edges are slightly browned.

  • Step 7: Transfer to a wire rack placed over a sheet of waxed paper to cool completely.

  • Glaze

  • Step 8: In a small bowl, mix together melted butter and confectioners' sugar. Stir in the rum and lime juice. Spoon glaze over cooled cookies.
