Ingredients

The ingredients are:
  • FOR SOUP
  • 1 tablespoon butter
  • 1 yellow onion (diced)
  • 2 cups chicken broth
  • 5 cups broccoli florets (2 heads)
  • 1 bay leaf
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon basil
  • 1/4 teaspoon thyme
  • 1/8 teaspoon sage
  • 1/8 teaspoon onion powder
  • FOR WHITE SAUCE
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • FOR FINISH
  • 1/2 cup buttermilk

How to Make

  • Step 1: Melt butter in a 3 quart saucepan over medium heat, saute onion until softened. Meanwhile, chop broccoli.

  • Step 2: Add remaining soup ingredients and bring to a boil, then simmer 10 minutes.

  • Step 3: Pour soup into blender and puree. Wipe out saucepan with a paper towel, being careful not to burn your hand.

  • Step 4: Make white sauce by melting butter in pan, whisk in flour and cook until roux (butter and flour) turns a light, golden color, 5 minutes or so.

  • Step 5: Add the milk a little at a time, icnreasing the heat to medium-high and whisking continually until sauce thickens.

  • Step 6: Reduce heat to low, add soup back to pan, then add buttermilk. Cook a couple more minutes than serve.
