Ingredients

The ingredients are:
  • 1/2 cup butter (very soft, not melted)
  • 1 whole (3 1/2 pound) chicken
  • 2 large yellow onions (diced)
  • 2 medium carrots (peeled then chopped into thick slices)
  • 2 to 3 leeks (cleans then diced)
  • Whole potatoes (optional)
  • 2 whole garlic bulbs (cloves separated from bulb, then peeled, do not mince cloves, leave them whole)
  • SPICE RUB
  • 2 to 4 teaspoon ground red chili powder
  • 1 tablespoon ground jeera powder
  • 1/2 tablespoon ground turmeric
  • 1 tablespoon garam masala
  • 2 to 4 teaspoons ginger garlic chilli paste
  • 2 teaspoons dried fenugreek seeds
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper (or more to taste)
  • 1 tablespoon teaspoon brown sugar

How to Make

  • Step 1: In a large shallow bowl, mix all the spice mix together (amounts do not have to be exact so you really don't need to measure). Mix in the very soft butter to the spices

  • Step 2: Using your hands, massage the whole chicken all over with the spice-butter mix using up all of the butter mixture. Refrigerate up to 24 hours.

  • Step 3: Preheat oven to 350degrees.

  • Step 4: Butter a 9x13 inch baking dish.

  • Step 5: Sprinkle all the veggies into the bottom then coat with oil or melted butter, season with salt, then spread out evenly.

  • Step 6: Place the whole chicken on top.

  • Step 7: Roast the chicken for 1 1/2 hours or until thoroughly cooked through (tossing the veggies a few times during cooking).

  • Step 8: Serve with roasted veggies and any pan juice)
