Ingredients

The ingredients are:
  • 1 papaya fruit (coarsely chopped)
  • 1 medium yellow onion (coarsely chopped)
  • 2 medium garlic cloves minced
  • 4 habanero peppers (stemmed and seeded)
  • 1 piece (1 inch) fresh gingerroot (chopped)
  • 1/3 cup dark rum
  • 1/3 cup fresh lime juice (only fresh)
  • 1/2 teaspoon salt
  • 3 teaspoons honey
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon anise seed
  • 1/8 teaspoon ground clove
  • 1/8 teaspoon ground turmeric
  • 1 pinch ground nutmeg
  • 1 pinch ground cinnamon
  • Black pepper (to taste)

How to Make

  • Step 1: Combine all ingredients in blender and puree just until smooth, or about 1 minute (taking care not to overblend and aerate). Pour into a saucepan and bring to a boil, then simmer gently, uncovered,for 10 minutes. Remove from heat and allow to cool. Place in refrigerator for 2 or more days before you use it or bottle it.
