Step 1: Preheat the oven to 375 F. Grease the bottom and sides of a 10-inch cake pan and set aside (cake pan must have high sides).
Step 2: FOR CAKE: in a large bowl, cream together the butter and sugar until light and fluffy. Add in the vanilla and eggs, and beat until well mixed.
Step 3: In a separate bowl, combine the flour, baking powder and salt. Add the flour mixture and stir to combine. Slowly stir in the milk and mix until smooth. Add in the diced apple and stir to combine.
Step 4: Pour the batter into the cake pan.
Step 5: Arrange the sliced apples over the batter, fanning them out and pressing them lightly into the cake.
Step 6: FOR TOPPING: in a separate bowl, combine 1/4 cup butter with 1/2 cup flour, 1/3 cup sugar, cinnamon, nutmeg and cardamom. Mix with a fork until crumbled. Pour the crumbles evenly over the top of the cake.
Step 7: Bake for 55-60 minutes, or until the center of the cake is set and the top is golden brown. Remove from oven and cool slightly before serving.
Step 8: Serve warm, or cool completely and store in an airtight container until ready to eat.
