  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled Gorgonzola cheese
  • Fresh ground pepper, to taste
  • SECOND RECIPE
  • 4 lettuce leaves (butter lettuce)
  • 2 tablespoons olive oil
  • 2 teaspoons lemon
  • 8 cherry tomatoes (sliced)
  • 1/4 cup pine nuts
  • 1/4 cup shredded parmesan cheese
  • 1 small avocado (sliced)
  • 1 pinch kosher salt
  • Fresh ground pepper, to taste
  • THIRD RECIPE
  • 4 lettuce leaves (butter lettuce)
  • 1 fennel root (sliced)
  • 2 tablespoons olive oil
  • 2 teaspoons lemon
  • 8 ounces cooked cod fish (poached, or other cooked meat)
  • 1 pinch kosher salt
  • Fresh ground pepper, to taste
  • FOURTH RECIPE
  • 1 butter lettuce
  • 1 pinch salt
  • Salad dressing (1/2 cup)
  • 2 medium tomato, diced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • Fresh ground pepper, to taste

How to Make

  • Step 1: First Recipe: Separate leaves and fill each with remaining ingredients. Place on serving platter and top with pepper.

  • Step 2: Second Recipe: Separate leaves, drizzle with olive oil and lemon juice, add tomatoes, nuts, cheese and top with avocado. Place on serving platter and top with kosher salt and pepper.

  • Step 3: Third Recipe: Separate leaves, drizzle with olive oil and lemon juice, top with fish. Place on serving plate and top with kosher salt and pepper.

  • Step 4: Fourth Recipe: Cut head of lettuce in half, grill cut side down til charred. Top with salad dressing, vegetables, cheese and nuts.
