Ingredients

The ingredients are:
  • SAUTE
  • 2 pounds fresh spinach
  • 1 sweet onion
  • 2 garlic cloves
  • 2 tablespoons butter
  • 1/8 teaspoon kosher salt
  • Fresh ground pepper, to taste
  • BECHAMEL
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup cream
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground nutmeg

How to Make

  • Step 1: You will need one large skillet and one large saucepan for this recipe.

  • Step 2: Wash, stem and chop spinach. Dice onion and crush garlic cloves.

  • Step 3: Heat butter in skillet over medium-high heat and saute onion until soft.

  • Step 4: Reduce heat to medium, add spinach and garlic, season with salt and pepper, and saute for a couple more minutes. Remove from heat.

  • Step 5: In saucepan, melt butter over medium heat. Whisk in flour and cook til flour turns golden, but not brown. Whisk in cream, a little at a time. Continue whisking til sauce thickens, then turn heat down to low.

  • Step 6: Add spinach to saucepan and stir well. If the rest of dinner isn't ready yet, cover and turn off heat.

  • Step 7: To serve, transfer to a heated casserole dish. To heat dish, place in oven at 170 degrees or fill with boiling water for a few minutes.
