Step 1: Preheat oven to 375 degrees and grease a baking sheet.
Step 2: In mixer, cream shortening and sugar, add eggs and vanilla.
Step 3: In separate bowl, whisk together dry ingredients, then add them and milk to mixer. Do not overmix.
Step 4: Gently roll out dough on floured surface to 1/2" thick or so, if less then reduce cooking time. Cut with cookie cutters and transfer to baking sheet, being careful not to crowd them.
Step 5: Bake for 8-9 minutes, maybe less in your oven. Let cookies sit for 5 minutes or so on pan before removing to cooling racks.
Step 6: Once cookies have cooled completely, frost with butter cream frosting.
Step 7: Frosting: In mixer combine butter, sugar and vanilla at lowest setting. You may want to put a dish towel over mixer to eliminate a powdered sugar cloud. Once incorporated, increase speed and beat til smooth. Split frosting among smaller bowls and stir in different colors of food coloring.
