  • 1 tablespoon lemon juice
  • 2 unbaked (9-inch) pie crust (crustpastry for 2-crust 9-inch pie, rolled 1/8 inch thick, unbaked)
  • 2 tablespoons butter

How to Make

  • Step 1: Combine sugar, flour, salt, cinnamon, lemon rind, blueberries and lemon juice.

  • Step 2: Turn into a 9-inch pie pan lined with pastry for 1 crust.

  • Step 3: Dot with butter.

  • Step 4: Cover with pastry for the other crust, turn under and flute edge.

  • Step 5: Slit the top crust to allow steam to escape.

  • Step 6: Bake at 425°F approximately 40 minutes until crust is lightly browned.
